Chef Emma

This is Emma, she is a cook in a little but cozy restaurant in Dombes, France! Emma can cook a lot of amazing French dishes but her favorite has to be “Cuisses de Grenouille” which literally means “frog legs” in French. It doesn’t sound too appealing but Cuisses de Grenouille is a French classic loved by many. Although many people around the world still believe the myth that French people eat frog legs all the time, actually most of them haven’t tried them at all because frog legs are super expensive! They taste a bit like chicken, just slightly softer and delicate. Just like other chefs around the country, Emma likes to prepare Cuisses de Grenouille with butter and garlic.

Liam the Math Teacher

Now, this is Liam, he is a math teacher that lives in Vendée and loves to cook, especially cook for his lovely wife Mile. One of Liam’s favorite dishes is the “Salade de chèvre chaud” or “Goat Cheese Salad” in English.
In places like Vendée where there is a lot of goat cheese, the goat cheese salad is a really delicious and popular dish. Liam likes to prepare his salad with walnut oil, cherry tomatoes, walnuts, tiny cubes of bacon, slices of toasted bread, and warm goat’s cheese. Just like anyone in France, when Liam and Mile have this tasty salad for dinner or lunch, they always drink wine or water. Never juice or soda. They can also spend hours just talking, even after they finish their meal!

Chloe the Pastry Chef

This is Chloë, a very famous chef in Paris who specializes in desserts, and one of his bests desserts is the chocolate soufflé! In France is very common for people to always eat dessert at dinner, and one great option is chocolate soufflé. The word soufflé comes from the French verb “to blow.” This delicious light and airy dessert are very famous all around France, and although salty soufflés are popular too (like the cheese soufflé), Chloë’s favorite has to be the chocolate soufflé. The crispy chocolatey crust is perfect for letting the creamy chocolate ooze out for a rich surprise!

Alsace the cook
![Alsace](https://storage.googleapis.com/learningtail/2022/01/15-7-e1642115872150-1024x664.png)
Now, to the north of France, in Alsace, lives Raphaël a cook who works in a small restaurant and his favorite dish is the “Flamiche”, which literally means “cake” in Dutch. The flamiche has a puff-pastry crust filled with cheese and vegetables, very similar to a quiche, another famous French dish. Although there are various fillings for the flamiche, Raphaël always prefers the traditional one: leeks and cream, very famous in Alsace, where this dish originated.
Is very common for French people, not only in Raphaël’s restaurant but almost everywhere in France, to wish people to enjoy their meals by saying “bon appetit.”
Juliette
![Juliette](https://storage.googleapis.com/learningtail/2022/01/16-5-e1642115858578-1024x672.png)
This is Juliette, a happy mother of three young children who lives in Provence and loves cooking! She likes all sorts of dishes but her children’s favorite is Ratatouille. Juliette learned the recipe from her mother, who learned it from her mother. This famous dish is prepared with slices of vegetables shallow-fried and then layered in a casserole before being baked in an oven.
Since the school of Juliette’s children is quite close to their home they can go back home to eat with her mother during their 2-hour lunch break!

Chef Aaron

And this is Aaron, a young chef who works at the Hôtel Tatin in Lamotte-Beuvron, where he cooks the Hotel’s famous “Tarte Tatin.” According to the legend, the tarte Tatin was created by mistake. In 1898, hotelier Stephanie Tatin was making a traditional apple pie when she accidentally left the apples cooking in sugar and butter for too long. In a hurry to rescue the dessert, she put the pastry base on top of the burning fruit and put it in the oven. The result was this delicious apple dessert that turned into the Hôtel Tatin’s signature!
