Chef Pablo
This is Pablo, a chef who works at a popular restaurant in Valencia, Spain. Pablo is well-known for a lot of dishes, but his favorite one is the classic and famous Paella, especially the seafood paella. The base of this dish is rice, and saffron gives its traditional color. The Paella is commonly eaten at lunchtime, with your family and friends.
Chef Valeria
Now, this is Valeria, she is a cook in a popular bar in Madrid, where she prepares the famous Spanish snacks known as “tapas”, and her favorite tapas are the “patatas bravas” or “spicy potato chips” in English. These potatoes are cubed, shallow fried, and covered with hot sauce. Patatas bravas are served basically the same in every bar around Spain.
Manuel the Writer
And if we travel way down to the south of Spain, we’ll get to Seville, where Manuel lives. He is a writer, but whenever he has some free time, he likes to cook for his wife and daughter. And his favorite dish is Gazpacho, a tomato-based soup most famous for being served cold. But it’s not a surprise when we consider the Seville hot summers. Its principal ingredients, aside from tomato, are peppers, garlic, bread, and lots of olive oil.
Chef Claudia
This is Claudia, an experienced chef who works for a fancy restaurant in Bilbao, where she prepares the prized dishes with a fish called “bacalao” also known as “salted cod.” This fish is not found in local waters, so it has to be salted to preserve it on the journey. Bacalao is served in all manner of dishes, and Claudia’s favorite is with pil-pil sauce, made of olive oil garlic, and the juice of the fish.
Chef Marcos
Near Portugal, in the ancient town of Cáceres, there’s a cozy restaurant where Marcos works as a cook, and his most famous dish is “Migas” which is literally “breadcrumbs” in Spanish. And that’s essentially what this dish is, dry breadcrumbs torn up and fried in a variety of combinations, often served with bacon, or chorizo, which is a kind of sausage.
This dish was invented many many years ago by agricultural laborers who had to be thrifty with their ingredients. In recent times, migas have found their way onto fancy restaurant menus.
Jimena the Barista
And this is Jimena, a young woman who recently opened a little coffee shop in downtown Madrid. Her specialty? Churros and leche frita.
Of course, Jimena’s coffee is pretty good, but all her clients love her churros, which are a snack made from fried dough pastry, cut into sausage shapes, and doused in sugar. Everybody loves dipping them in hot melted chocolate!
Jimena’s other specialty is Leche frita, which literally translates into “fried milk.” Frying milk sounds like something impossible but actually can be done. Fried milk, is prepared by whipping up milk, egg yolks, and flour. Then this is left to chill and solidify, before being coated in breadcrumbs and fried. It kinda looks like nuggets but it’s a delicious dessert that can be served hot or cold.
